Chicken Wild Rice Soup

I’ve always been a huge fan of Panera’s chicken wild rice soup, so I decided to try my hand at a copycat recipe.  I found quite a few existing recipes, but they all varied quite a bit.  After several attempts, I think my version comes fairly close.

Notes:

Like Panera’s version, this soup pairs well with a crusty roll or bread.  Supermarket rotisserie chicken works great for this recipe.

Chicken Wild Rice Soup

Ingredients:

  • 4 cups chicken broth/stock
  • 2 1/4 cups water
  • Uncle Ben’s Wild Rice Roasted Garlic flavor (6 oz. package)
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup diced carrots
  • 2 tbsp olive oil
  • 3 tbsp all purpose flour
  • 1 cup heavy cream
  • 1/4 tsp ground pepper
  • 1 1/2 cup cooked chicken, diced or shredded.

Directions:

  1. Saute the carrots, celery, and onion in a large sauce pan until soft, roughly 5 minutes.
  2. Add in the rice and seasoning packet from the rice, then stir.
  3. Stir in the flour.
  4. Add the chicken broth and water.
  5. Bring to a boil, then simmer for 15 minutes.
  6. Add in the chicken and heavy cream, then simmer for an additional 30 minutes, or until the rice is completely cooked.
  7. Add salt and pepper to taste.
