I’ve always been a huge fan of Panera’s chicken wild rice soup, so I decided to try my hand at a copycat recipe. I found quite a few existing recipes, but they all varied quite a bit. After several attempts, I think my version comes fairly close.
Notes:
Like Panera’s version, this soup pairs well with a crusty roll or bread. Supermarket rotisserie chicken works great for this recipe.
Chicken Wild Rice Soup

Ingredients:
- 4 cups chicken broth/stock
- 2 1/4 cups water
- Uncle Ben’s Wild Rice Roasted Garlic flavor (6 oz. package)
- 1/2 cup diced celery
- 1/2 cup diced red onion
- 1/2 cup diced carrots
- 2 tbsp olive oil
- 3 tbsp all purpose flour
- 1 cup heavy cream
- 1/4 tsp ground pepper
- 1 1/2 cup cooked chicken, diced or shredded.
Directions:
- Saute the carrots, celery, and onion in a large sauce pan until soft, roughly 5 minutes.
- Add in the rice and seasoning packet from the rice, then stir.
- Stir in the flour.
- Add the chicken broth and water.
- Bring to a boil, then simmer for 15 minutes.
- Add in the chicken and heavy cream, then simmer for an additional 30 minutes, or until the rice is completely cooked.
- Add salt and pepper to taste.
